Chocolate Crackles

One of my favorite Christmas cookies. Oh my do we love these chocolate cookies! This is a fantastic recipe.

CHOCOLATE CRACKLES

8 oz Semi Sweet Chocolate Chips
1 1/4 cups flour
1/2 cup Hersey’s Coco Powder
2 tsp baking powder
1/4 tsp salt
1/2 cup (1 stick) unsalted butter
1 1/2 cup packed brown sugar
2 eggs
1 tsp Vanilla
1/3 cup Whole milk
*granulated sugar
*powdered sugar

1. Melt chocolate in double boiler, let cool slightly.

2. In the mean time sift together dry ingredients into large bowl.

3. In a small bowl cream butter and brown sugar. Mix in eggs and vanilla, then melted chocolate.

4. Mix into flour mixture and milk. Dough will seem very wet, more like a batter. This is fine. Cover bowl with plastic and chill. I usually chill it overnight then take it out and let it warm up a little to make it easier to work with. But you can also just chill it for an hour or two to let it set up.

5. Using an ice cream scoop or spoon scoop it out and roll it in hands into 1 inch balls. I usually wear latex gloves for this part b/c it is a rather messy endeavour. Roll in granulated sugar, then powered sugar. Then place on a cookie sheet.

6. Bake 350 degrees for 14 minutes (bake until surfaces crack). Either bake on parchement paper or remove immediately to wire racks to cool (they will stick to the cookie sheet.)
