Not so Fancy Pants Meatloaf

This recipe is my adaptation from a well known cookbook. The cookbook calls for things like clarified butter, home made bread crumbs, and well a lot of fancy pants stuff that moms like us are just too busy to bother with!

Best thing about this recipe… you get 2 out of them! freeze one and you have a quick dinner on a busy night. Also all the veggies, TONS of fiber and nutrients added in, even if they are cooked.

I use my food processor to cut the veggies then combine them into a hot skillet as I batch it out, works every time you just need to cook them until soft.

All of these veggies should be finely chopped in a food processor or by hand then sauteed in butter until soft.

2-3 TBSP butter
1 small onion
2 small bunches green onions/ scallions (10-14)
2 carrots peeled
2 stalks celery
1/2 red bell pepper
1/2 green bell pepper
4-5 cloves of garlic
kosher/ sea salt to taste

Cook the above ingredients in butter until soft, take off stove top and cool.

In a mixing bowl combine the following…
1 tsp black pepper
1/2 tsp white pepper
1/4 tsp cayenne/ red pepper]
1 tsp cumin
1/2 tsp nutmeg
3 eggs
1/2 cup Ketchup
1/2 cup half and half (I use whole milk)

In a large bowl combine the following….
2 lbs lean ground beef
1 lbs sausage (NOT fennel flavored Italian sausage)
1 cup bread crumbs either flavored or plain.
cooled veggie mix from above
sauce mix above.

Kneed well. Divide into two rounded loaves in two pie dishes. I cook them both then freeze one for later usually.

Bake 375 degrees F for approx 45 minutes (I do use a meat thermometer for my oven always!)

Serve w/ mashed potatoes and steamed green beans or broccoli. (and ketchup of course!)
